Mock Chili’s Salsa

I was so excited when I got this great recipe for Chili’s salsa from my friend Jennifer a few months ago. It is so good and tastes so much like the salsa at Chili’s, which I love so much. It has a great balance of flavor and a nice little kick to it. Just a warning though-you may become addicted. We serve this with baked tostitos, which also makes it a nice healthy snack.

Ingredients
1 Large can Whole Tomatoes
1 can Rotel (original blend)
1/2 cup chopped onions
1-4 tsp. diced jalapenos (I use 1 tsp., but if you like it hot, add more)
3/4 tsp. garlic salt
1/2 tsp. ground cumin
1/2 tsp. kosher salt

Directions:
Place the onions and jalapenos to food processor or blender. Pulse 2-3 times. Add all other ingredients. Process/pulse for a few seconds. Add in more salt/onions to taste if needed. Refrigerate for at least 30 minutes to allow flavors to marry. This makes quite a bit of salsa, so it’s perfect for parties and will last a while in a air tight container.
