Opening Ceremonies: Food From Around The Globe

My husband, Adam, had a great idea for our Sunday School Social this month (we are in charge of planning them). He suggested that we have an opening ceremonies party potluck, but with the condition that no one could bring American food. Everyone would bring food from all over the world. It was a huge success! We had great food, and had a wonderfuld time. Everyone got really creative with the food. We had Greek Spanikopita, German Brauts, Sweedish Meatballs, Asian Slaw, Mexican Steak Quesadillas, Chips & Homemade Salsa, Guatemalian Tres Leches Cake, and my Thai dishes.

I had been to a new Thai restauarant recently and had chicken satay for the first time, and loved it. Shortly after, Good Things Catered posted this recipe for chicken satay! So, I thought that would be perfect for me to make for our around the world olympic party. I also found a great thai pineapple rice recipe on A Taste of Home Cooking to go with it. I made a couple of tweaks to the rice because it was a bit spicy for me. They were both huge hits! Everyone absolutely loved them! These are definitely going on my list to cook on a regular basis. They were both easy to put together. Click on the Good Things Catered link above for the chicken satay recipe, and the rice recipe is listed below with my changes, along with a peanut dipping sauce for the chicken.

Thai Pineapple Rice

2 Cups Basmati rice, cooked according to package directions
1 large white onion, cut into large dice
1/8 tsp. crushed red pepper
1 large can pineapple tidbits, drained
Soy Sauce (2-3 tbsp.)
Chopped cilantro to taste (1/4 cup or so)

Directions:
Heat a tbsp. olive oil in large skillet over medium heat. Add onion and crushed red pepper and cook until softened and opaque. Add cooked rice & pineapple, stir to heat through. Add the soy and cilantro to taste. Serve & enjoy!

Peanut Sauce

1/2 cup crunchy peanut butter ( I used reduced fat)
2 tbsp. Soy
1 tsp. brown sugar
1/4-1/2 tsp. crushed red pepper
1 clove garlic, minced
1/2 cup water
2 tbsp. rice wine vinegar
2 tsp. sesame oil

Directions:
Combine all ingredients in blender and mix. It’s that easy!
