Pork Medallions with Cranberry Stuffing

Since I am on vacation, I thought I would leave you with an easy recipe. This is a great go-to meal during the week when you are pressed for time. It calls for using pork tenderloin, but I just used boneless pork chops and it worked great. This is easy to put together, and will look like you took a ton of effort. I found this recipe in Kraft’s Food & Family Magazine and you can find the recipe here. The only major change I made is to add chicken stock to the stuffing in place of the water. I microwave the stuffing according to the package directions and then bake at 350 degrees for about 15 min. so that the stuffing sets together. Hope you enjoy!
