Game Day Turkey Nachos

Or should I say election day nachos. This is such an important day in our nation’s history. Let me take this opportunity to urge you to go out and vote. No matter what candidate you check on the ballot, exercise your right and responsibility to vote. Every vote counts and matters.

On to the nachos. Adam and I made these Sunday night during our NFL games. And let me just say, Go Titans! 8-0!! These are super yummy and easy to make. You can put these together in no time and not miss a play (or an electoral vote).

Here’s what you need:
1 lb. lean ground turkey
1 packet taco seasoning
1 white onion, chopped
1 can black beans, partially drained
1 tsp. garlic powder
2 tbsp. olive oil

For Topping:
Romaine lettuce, chopped
Roma tomatoes, chopped
Light Sour Cream
2 % Mexican Shredded Cheese
1/4 of a red onion, chopped
1 Avocado, sliced
Tortilla Chips

Directions:
Brown turkey with 1/2 the chopped onion and taco seasoning.
Sauted the remaining 1/2 onion in a pot with 1 tbsp. olive oil. Add Black beans, garlic powder and 1 tbsp. olive oil and simmer until heated through.
Place tortilla chips on a plate and top with meat, black beans and all remaining ingredients.
Sit back and enjoy your game!
