Pioneer Woman’s Pumpkin Butter

I saw this recipe for pumpkin butter about a month ago on Pioneer Woman Cooks. If you haven’t been to her website you have got to check it out. She has amazing recipes and gives step by step picture instructions on how to do everything! Once I saw these, I knew I wanted to make this for Thanksgiving and serve them with buttermilk biscuits. In prepping for my Thanksgiving dinner that I am hosting on Wednesday, I went ahead and made this and it is out of this world! It is so creamy and delicious and I know it will be perfect on a warm flaky biscuit! I can’t wait to gobble up this stuff (pun intended:) haha)! This is super easy to put together. It took me all of five minutes, if that. It’s also a great way to use up any left over pumpkin puree and/or yogurt. So be sure to add this to your holiday menu and you will be the star of the party! In true Pioneer Woman fashion, lets start with the cast of characters.

Yogurt, Pumpkin Pie Spice, Powdered Sugar, Pumpkin Puree


Pumpkin Butter

Ingredients:
1 cup plain or vanilla yogurt
1 cup pumpin puree
1 tsp. pumpkin pie spice
1 heaping cup powdered sugar

Directions:
Dump yogurt into bowl
Add pumpkin & pumpkin pie spice
Add powdered sugar
Stir and taste for flavors

  2. Yum! Just this morning I had a Cooking Light pumpkin waffle (from my blog), topped with pumpkin butter. But sadly, I bought my pumpkin butter at Whole Foods! It was a GREAT topping on the waffle, and much healthier than maple syrup!

    Hmmm, looks great. Too bad I already have 2 jars of it already made from Trader Joe’s. Maybe next time! It’s sooo good with anything and everything though! hehehe

  7. Update: We made this for Thanksgiving and it was amazing!!!! We added a bit of cream cheese to thicken it up and it worked great. Thanks again for the post!
