Stovetop Macaroni & Cheese

I knew I wanted to make Mac & Cheese for Thanksgiving and I wanted to make it from scratch, since I had never done it before. I came across this recipe on Fresh From Cate’s Kitchen and loved that it still only used the stovetop. This was so creamy and delicious. It was quick and easy to throw together as well. Everyone loved it. You could also put it in a dish and top with extra cheese and bake if for about 15-20 ninutes if you wanted to.

Easy Mac & Cheese
Fresh from Cate’s Kitchen
adapted from Cooking Light, May 2007)

Ingredients:
1 1/4 cups uncooked macaroni
1 cup 1% milk (I used skim)
2 tbsp all purpose flour
1 1/4 cups 2 % shredded sharp cheddar cheese
1/2 tsp salt
a few grinds of a pepper mill
dash of cayenne (optional)

Directions:
Cook pasta in a medium saucepan according to package directions.
Transfer to a colander.
In the same saucepan, combine the milk and flour over medium heat, stirring with a whisk.
Cook, stirring constantly until thickened (about 2 minutes).
Add cheese, salt, and pepper, and continue whisking until all the cheese is melted.
Turn off heat, stir in the pasta, and let sit for a few minutes before serving.
