My Husband’s Tuna Pasta Salad

For over two years of our marriage, Adam kept asking me if he could fix me his tuna pasta. I continually refused. I just didn’t think it sounded appetizing, at all. One Sunday after church, I finally conceded and told him that he could fix it. I have to admit, I was pleasantly surprised. It was really good. This is perfect for a light lunch or snack and can be served cold or slightly warmed up (which is how I like it). It’s also healthy and goes great over whole wheat crackers. So now I ask for it very often because it’s a great weekend lunch. Oh, and I do always go back for seconds.

Tuna Pasta Salad
Ingredients:

1 can tuna packed in water, drained
2-2 1/2 cups elbow macaroni noodles
1/4 cup chopped carrots
1/4 cup chopped celery
2 eggs, boiled, peeled and chopped
2 tbsp. fat free mayonnaise

Directions:
Place egg in water and bring to boil. Add macaroni noodles to water and boil according to package directions. Drain pasta and eggs and place pasta in medium sized bowl. Peel and chop eggs and add to macaroni noodles. Add tuna, carrots, celery, mayo, and salt & pepper to taste. Stir together and serve with whole wheat crackers.

  1. I should try this – we usually have all of those ingredients on hand. I like the addition of egg. I think my DH would really enjoy something like this, too.

  5. Delete the carrots and add cabbage and you have my dad’s tuna salad, which I loved sooooo much all my life. Ah, the simple pleasures. 🙂
