Chicken Enchilada Roll-ups

We had a dinner meeting at our house on Friday night to prepare for a youth retreat we are leading in August, and I decided it would be fun to have a Mexican Fiesta theme to the dinner. So everyone brought some sort of mexican dish. I had seen these roll-ups on Delicious Meliscious and Cook Like a Champion and knew they would be a great addition to the party. Little did I know they would be such a huge hit! These went like hotcakes! They were so fresh and full of flavor and the perfect bite. This is my new go-to appetizer! They were super easy to make and everyone was asking how to make them. Definitely give these a try for your next gathering.

I have taken these to two different gatherings, and they where also a big hit. Everyone loved them, and begged me for the recipe. I would highly reccomend these to anyone.

Hi! This may sound silly but is the flavor really like enchiladas? These look delish and I am considering it for our BBQ, but I don't like the flavor of enchiladas at all. Also, would this be OK to prepare the night before?
    Thanks!

I almost forgot, how many cups of chicken do you need for this recipe (or an estimate)? I already have some frozen chicken in the freezer so just need a ballpark.
    Thanks!

I made these for a baby shower on Sunday. I got SO many compliments! Thanks for the great recipe. I followed it almost exactly, except I used rotisserie chicken instead of canned chicken. Delicious 🙂
