Berry Cheesecake Parfaits

Some friends of ours recently had a cookout and one couple made these wonderful berry cheesecake parfaits. I knew I had to try them! She had found them in the Spring Food & Family magazine. I made them this past weekend when my mom, stepdad, & brother came over for dinner. These were so good! I loved the creaminess of the pudding mixture combined with the crunch of the vanilla wafers and the sweetness of the fruit. A perfect summer dessert! I also made this low-fat, so it’s a healthier way to have a sweet treat!

Berry Cheesecake Parfaits
Ingredients:
1 pkg. (8 oz.) Fat Free Cream Cheese, softened
1-1/2 cups cold skim milk
1 pkg. small sugar free/fat free Vanilla Instant Pudding
1-1/2 cups thawed fat free cool whip, divided
24 reduced fat vanilla wafers, coarsely chopped
1-1/2 cups frozen mixed berries, thawed (or fresh blackberries, raspberries, blueberries & strawberries)

Directions:
Beat cream cheese with mixer until creamy. Gradually beat in milk. Add dry pudding mix; mix well. Whisk in 1 cup cool whip.

Layer half each of wafers, berries and pudding mixture in 4 parfait glasses. Repeat layers.
Top with remaining cool whip if desired. Serve immediately, or refrigerate about 20 minutes and serve cold.

    These look great! I think I would like to make them for my bbq, but it would be time consuming (and would take up a lot of fridge space) to do them separately (even though I know that is the idea and they look fancy). Would this work in a big (glass) serving bowl? Then people could just scoop some out.

    I think you could definitely do this in a large glass serving bowl! That would work well for a larger crowd for sure. You might just want to double the recipe to make sure you have enough of the pudding mixture for layering purposes.
