Dessert Sliders & Cookie Fries

I had been wanting to make dessert sliders after seeing them in a Rachael Ray magazine a year or so ago. I was planning on making a variation of hers (she used vanilla wafers & fudge) for our recent cookout, and then I came across Bakerella’s post using cupcakes and brownies to make them. I knew I had hit the jackpot. These were such a hit at the cookout. People were even taking pictures of them! I had to explain that they were cupcakes and not real burgers…they thought they were real! These also taste great too! You can also find really cute ones at Big City Cooking.

These are super easy to make. I’ve been trying to make cakes, etc. from scratch these days, but I followed Bakerella’s lead and used a cake mix and a brownie mix since I knew the decorating would take a bit of time. I did make the sugar cookies for the fries from scratch, using this Martha Stewart recipe. I also used a container of frosting and the Wilton gel colors to make the green for the lettuce, yellow for the mustard, and red for the ketchup. Things you’ll need:
Cake Mix
Brownie Mix
Sugar Cookie Recipe/Mix
1 container vanilla frosting
Kelly Green, Golden Yellow, & No Taste Red Wilton Gel Colors

Directions:
Make cupcakes & brownies according to package directions. For the cupcakes, sub 1 cup of milk for the water. Once cupcakes and brownies are cool, slice each cupcake in half. Using a small round cookie cutter, cut out circles in the brownies and place on bottom slice of cupcake. I got about 20 brownie circles out of a 9 x 13 pan. On top of the brownie rounds, pipe the red, yellow, and green icing. Top with cupcake top and store in airtight container.

For the sugar cookie fries, roll out dough and cut dough into strips using a pizza cutter. Lay 2 inches apart on a cookie sheet and bake according to recipe directions. Once you take them out of the oven, cut each cookie strip in half vertically for skinny fries. Allow to cool and serve with additional red icing to look like ketchup.

    So if you want to make the “buns” a lot easier, buy a whoopie pie pan. It’s exactly the right depth for the buns. You don’t have to cut anything at all. Just bake them up and use one for the bottom and one for the top. We got ours at Williams-Sonoma but they can be found at other stores, too!
