Busy Day Cobbler

I absolutely love my mother-in-law’s blackberry cobbler and am so thankful she gave me the recipe last year, but I’ve never gotten around to making it. It’s such a great throw everything in the dish kind of recipe, and can be adapted for any kind of fruit.

We had enjoyed an amazing mango cobbler at the Boma when we were at Disney, so I thought I would try and re-create that. After perusing some other mango cobbler recipes through searching the internet, I decided to stick with my mother-in-law’s recipe and just add in cinnamon and vanilla to the mango. This dessert is so comforting and delicious. and is also great paired with vanilla ice cream. The mango is a great alternative to peach, especially if you are looking for something different.

Busy Day Cobbler

Ingredients:
1 stick margarine, melted
1 cup self rising flour
1 cup sugar, plus 1/2 cup
3/4 cup milk
2-3 cups fruit (see mango add-in below)

Directions:
Melt margarine in a 2 quart baking dish. Mix together flour, 1 cup of sugar and milk. Pour flour mixture into middle of melted margarine.

Add your choice of fruit into baking dish, evenly distributing the fruit. Sprinkle remaining 1/2 cup of sugar on top. Bake at 350 degrees for 30-35 minutes or until golden brown on top.

For Mango Add-in:
3 large mangos, peeled & diced
pinch cinnamon
1 tsp. vanilla

Peel & Chop mangos & place in medium sized bowl. Add cinnamon and vanilla. Stir together and add in to cobbler using directions above.

  5. This looks great! I really love that you used mangoes! I never thought to use them instead of peaches or other fruit in a dessert.
