Red Velvet Whoopie Pies

I was looking for something to make for a youth retreat this past weekend and saw these red velvet whoopie pies that I had starred a while back in my google reader from Runs with Spatulas. They were a huge hit and several people said they were their favorite thing they ate all weekend. I made mine from a cake mix, but you could also make them from scratch using the cookie recipe from these red velvet black and white cookies . These are so delicious and so addictive! Red Velvet Whoopie Pies

Cookie cakes:
Ingredients:
1 Box red velvet cake mix
1/2 Cup butter, softened to room temperature
2 Eggs

Directions:
Preheat oven to 350 degrees.Mix ingredients until combined.Drop spoonfuls of cookie batter onto baking sheet by the teaspoon for smaller cookies or tablespoon for medium size cookies about two inches apart.Bake for 10-12 minutes. Cool.

Cream Cheese Filling:
Ingredients:

1/2 cup butter, room temperature
1 8 oz. Package cream cheese, room temperature
1 1lb. Box of confectioner’s sugar
1 tsp Vanilla

Directions:
In a mixer, cream butter, cream cheese and vanilla.Gradually add sugar and mix until smooth.

To Assemble:
Take one cookie, bottom side up and spread about 1 tbsp. of the filling evenly on the cookie. Top with another cookie with the bottom side touching the filling. Store in airtight container and refrigerate, or serve immediately.

    8. I'm not even sure how I found your blog, but I'm so glad I did! I made these for my school bake sale this weekend and they were a huge hit! First item to be sold out. Pretty impressive coming from the girl who usually buys store bought and bags them up for the sale.
