Angel Food Cake Trifle

This angel food cake trifle is one of my favorite desserts to throw together when I need to take something to an event. It’s delicious, light & refreshing. A great dessert for a cookout or barbecue. Everytime I make this people rave over it and ask for the recipe. Every time, I promise. It may not look like much, but it’s one of those desserts you keep going back for seconds…plus it’s on the healthier side because it’s made with angel food cake and fruit! I got this recipe from my college roommate Jill when we were in college, and I’ve been making it ever since (I won’t say how many years ago that was because it makes me feel old!!) This recipe is super simple, but you won’t regret it!

Angel Food Cake Trifle

Ingredients:
1 store bought or prepared angel food cake, torn into 1 inch pieces
1 pint strawberries, hulled and sliced
3 bananas, sliced & quartered
1 can pineapple tidbits (20 oz.), drained
1 package (1.4 oz.) fat free instant vanilla pudding
2 cups skim milk
1 8 oz. container light or fat free whipped topping

Directions:
In a medium sized bowl, combine the strawberries, banana and pinapple and gently stir until all fruit is distributed throughout, set aside.
In a medium sized bowl, add pudding packet and 2 cups cold skim milk. Whisk for 2 minutes until it starts to thicken, set aside.

To Assemble:
In a large clear glass bowl, layer bowl with half of the angel food cake 1 inch pieces. Top the angel food with half of the fruit mixture. Top the fruit with half of the vanilla pudding. Top the pudding with half of the whipped topping. Repeat layering, ending with the whipped topping.
