Happy New Year!! I hope everyone is rested up from the festivities and beginning to get back in the swing of things. It’s been hard for me, total lack of motivation for sure! I need to get going. Adam & I did sit down yesterday and make a list of goals for this year. We called them goals and made sure they were realistic so that hopefully we can obtain them with God’s help! One of the main ones for me was focusing more on my blog this year and planning out my meals and blog schedule better and also working on my photography skills. Hopefully I’ll be able to get a speedlight for my camera soon so that my lighting will improve!
I do try to go back to healthy eating after the holidays, and I am doing that but I couldn’t help but share these cookies I made for my treat bags I gave out before Christmas. They had a great flavor and I loved the taste of chocolate and the crunch the m&ms added. I did think they were a tad dense, so I think maybe bake them a little less and they’ll be great.
Peanut Butter M&M Cookies

1 cup all purpose flour
2/3 cup old fashioned rolled oats
1 1/2 tsp. baking powder
1/4 tsp. salt
1 cup Creamy Peanut Butter
1/2 cup butter
1 cup packed light brown sugar
1/3 cup sugar
1 1/4 tsp. vanilla extract
1 package M&Ms
Preheat oven to 350 degrees. Combine flour, oats, baking powder & salt in a medium sized bowl. Whisk together & set aside.
Cream together peanut butter, butter, and both sugars in the bowl of a stand mixer fitted with the paddle attachment. Mix until light & fluffy. Beat in egg & vanilla. Turn mixer to low speed and gradually mix in flour mixture. Remove bowl from mixer & stir in M&Ms.
Roll dough into 1 inch balls & place 3 inches apart on prepared baking sheet & flatten crossways with fork. Bake 8-10 minutes, until lightly golden and centers are still soft. Cool 1 minute on baking sheet & transfer to cooling racks. Store in an airtight container.
