Chicken Veggie Bake (1 of 4)

My friend Jennifer is a fabulous cook. Pretty much everything she makes I ask her for the recipe.  She made us this one dish chicken & veggie bake and let me just tell you it was incredible.  It seems unassuming, but it is packed full of flavor. The best part is you only use one dish and you bake the chicken & the veggies all together, which makes it so easy! Every bite was mouthwateringly delicious!

One Dish Chicken & Veggie Bake

Ingredients:
4 chicken breasts
1 1/2 packets dry ranch dressing mix
3 cans green beans, drained
2 1/2 lbs. red potatoes, diced
1 tsp. salt
1 stick butter, melted

Directions:
Preheat oven to 375 degrees. Spray a 9 x 13 baking dish with cooking spray.

On one half of the dish, spread your diced potatoes, then on the other half spread your green beans.  Place chicken breasts down the center.  Sprinkle the dry ranch dressing mix evenly over top of the entire dish, and sprinkle evenly with the salt. Drizzle the melted butter evenly over top of everything.

Bake for approximately 1 hour, until chicken is cooked through and everything is bubbly.  Serve immediately.

I have a couple of questions! first, would it be ok to use frozen green beans? if so, would it be a pound of frozen green beans? and would i need to thaw them before assembling the dish? also, do you think i could use sweet potatoes instead of red potatoes? I really don’t know much about cooking~~ Would really appreciate your help! 🙂

    • Thank you so much Ann! Another reader commented that she made them with frozen green beans and they worked great. I’m not sure about how the sweet potatoes would taste with the ranch. Hope that helps!

  9. I was so excited to try this i must have done something wrong. I cooked it for over 2.5 hoUrs and it was still cold and raw. What happened?

    • I’m so sorry it didn’t work for you! Mine cooked completely through after an hour and I even used large chicken breasts. I’m not sure what could’ve happened, unless the temperature of your oven runs cold possibly?

    I made this for dinner last night. It is ridiculously easy and very tasty. This will be on our dinner rotation from now on. This is the perfect weeknight meal for anyone, but especially for those on the go. I used unsalted butter and everything turned out perfectly cooked after one hour. Thanks for sharing this recipe!

  11. Thanks for this recipe! It came out great and ALL the kids loved it! Which is rare, so thank you again. I used white potatoes instead of red because that’s what I had on hand and i forgot the salt, but it was still yummy!

  13. I only have frozen chicken breasts and fresh veggies. what should I do?

  14. This turned out great for me but I modified it based on what I had. I used Fresh green beans instead of canned. I also didnt have a ranch packet but intead had a pesto seasoning packet so i used that! I sprinkled some minced garlic on top and some lemon juice as well! I will definitely be making this again the correct way and my cheating way.

  17. Thanks for posting this recipe. I made it tonight for our church community group and it was a hit! as you said, it is packed full of flavor and super easy. I baked it (uncovered) for about 35 minutes before I had to leave, so i finished baking it at the hostess’s home. we got to talking and left it in the oven for an hour! the chicken was nicely browned and despite the additional 30 minutes and it was not dried out at all. thanks again!
