Spinach Squares

Spinach Squares (1 of 2)My mom made these for me one night when I was at her house for dinner and they were so delicious I asked her to make me a copy of the recipe right away.  These were so flavorful and cheesy! Such a fabulous side dish or you could even cut them into smaller squares and serve them as an appetizer.  I will definitely be making these again and again! They aren’t exactly healthy but they do have spinach so doesn’t that qualify?! 😉

Ingredients:
1 10 oz. package frozen spinach
1/3 cup unsalted butter, melted
1 cup all purpose flour
1 cup milk
1 tsp. salt
2 eggs, beaten
10 oz. shredded cheddar cheese
1/2 cup onion, finely chopped

Directions:
Preheat oven to 350 degrees. Spray a glass 8 x 8 baking dish with cooking spray, set aside.

With the spinach still frozen, place on a plate and steam it for 5 minutes in the microwave.  Drain extremely well, removing all the water.  Place in a large bowl and add in the melted butter, flour, milk, salt, eggs, cheese & onion.  Stir to fully combine.

Pour mixture into the prepared baking dish and bake for approximately 25 to 30 minutes until center has set and the top is slightly golden.  Cut into squares and serve as a side dish or cut into smaller squares and serve as appetizers.
