Grilled Shrimp

This time of year we love to grill most of our meals. For one thing, Adam does the grilling so it lets me off the hook a bit from cooking, haha! Well, I do all the prep but so nice when he cooks it! We hadn’t had shrimp in a good while, so I picked some up and thought it would be the perfect thing to grill! This Grilled Shrimp had such wonderful flavor and came together so quickly! What’s your favorite thing to cook on the grill?

Ingredients:
1 lb. extra large shrimp, peeled & deveined
1/2 tsp. paprika
1 tsp. Italian seasoning
1/4 tsp. freshly ground black pepper
1/2 tbsp. light brown sugar
1/2 tbsp. minced garlic
Juice of 1/2 lemon (plus more for serving)
1 tbsp. extra virgin olive oil

Directions:
In a small bowl, stir together the paprika, Italian seasoning, pepper & brown sugar. Place in a large ziplock bag and add the garlic, lemon juice, & olive oil. Use your hands to smoosh it together. Add the shrimp and zip the bag, lightly smoosh it together again with your hands to coat the shrimp. Place in the refrigerator and let marinate for 20 minutes.

While the shrimp marinates soak 5-6 wooden skewers in water. Once shrimp has marinated, remove the skewers from the water and place the shrimp on skewers. Approximately 4-5 per skewer. Grill over high heat for 5-6 minutes, turning frequently to cook all sides. Serve with a wedge of lemon to squeeze over top if desired.
