Amazing Skillet Corn

For Thanksgiving the past two years, my step-mom has made the most Amazing Skillet Corn! Like it will change your life and make your mouth water! And you will be craving it once you’ve tried it! This makes a huge amount for a big family gathering or party but easily halve the recipe and use the smaller can of evaporated milk for a smaller crowd. I know corn isn’t always the star of the show, but this recipe is a show stopper for sure! It’s also one of those recipes passed down from generations so it’s a little bit here and a little bit there, which makes it even more special. This definitely needs to be on your table for Christmas dinner! Another fun thing is she serves everything family style at the table so we are all passing our plates and helping each other fill our plates which is so fun!

Amazing Skillet Corn

Ingredients:
16 Ears of corn shucked and cut off the cob
1 (12 oz.) can evaporated milk
12 oz. water
1/4 cup sugar
1/2 cup (1 stick) butter
Optional: 1 tsp. cornstarch mixed with 1 tsp. water

Directions:
In a very large skillet, Place corn, evaporated milk, water, sugar and butter and stir together. Cook over medium heat for 1 hour, stirring often. If it needs thickening add the slurry of cornstarch to thicken.

Notes:
*Just fill the can of evaporated milk up with water after you add it to the recipe
*Can easily halve this recipe for a smaller gathering
*To save time purchase corn that has already been shucked or used canned or frozen corn

  2. I agree with Chris – I would love to use frozen corn, but don’t know how to translate 16 ears to a number of ounces or cups.
