Killer Crack Peanut Butter Fudge

It’s officially peanut butter baking day here at Macaroni & Cheesecake. I came across this recipe for Peanut Butter Fudge on Dinner & Dessert and was intrigued because it didn’t use a candy thermometer and looked so creamy and delicious. I decided to make it for my Christmas baskets, and I am so glad that I did! This fudge came together so easily and just melts in your mouth. I will be making this over and over again!

One funny story about making this fudge…I overlooked the fact that this recipe needed evaporated milk when making my grocery list. Thankfully I had a can in my pantry. Well I opened it and it was a light brown color. This gave me serious pause, and I looked at the expiration date-May 2008. So I immediately poured it out and called my husband. He, yet again, came to my rescue and ran to the store on his way home to get a fresh can.

Killer Crack Peanut Butter Fudge

Ingredients:
3 cups sugar
3/4 cup butter
2/3 cup evaporated milk
1 cup JIF peanut butter
1- 7 oz jar marshmallow creme
1 tsp vanilla
 
Directions:
Combine sugar, butter, and evaporated milk in a heavy 2-1/2 quart saucepan. Bring to a full rolling boil, stirring constantly. Continue boiling over medium heat for 5 minutes, stirring constantly to prevent scorching. Remove from heat. Add the peanut butter, stirring until melted.. Add marshmallow creme and vanilla; beat until well blended. Spread in a buttered 9 x 13 x 2 – inch pan. Cool at room temperature, then refrigerate. Cut into squares when firm.
