Oven-Fried Honey Chicken Nuggets

I needed an easy weeknight meal and had starred these Oven Fried Honey Chicken Nuggets from Sweet Tea in Texas a while back in my Google Reader. These were really easy to make and so delicious! This might just be my new go-to chicken recipe. I loved the sweetness the honey gave to the chicken. And the combination of the balsamic gave it just the right balance. If you aren’t a balsamic fan, this doesn’t have an overwhelming balsamic flavor, it just mellows out the sweetness of the honey. The recipe called for 2 tbsp. of balsamic, but I just added one because I like things a smidge on the sweet side. I also recommend doubling the honey mixture because I ran out of it before I ran out of chicken and had to make more. Oven-Fried Honey Chicken Nuggets
Ingredients:
1/2 cup honey
2 tablespoons balsamic vinegar
1 1/2 cups dried bread crumbs (Panko if you have it)
Olive Oil cooking spray
1 pkg/1 pound fresh boneless, skinless chicken breast, cut into bite sized pieces

Directions:
Preheat oven to 375°F. Line a baking sheet with foil. Spray foil-lined baking pan large enough to hold all chicken pieces in one layer.
In shallow bowl, whisk together honey and vinegar. Set aside.

Place bread crumbs in a small saute pan and toast lightly over low heat for about 3-4 minutes until lightly golden brown. Pour bread crumbs a little at a time into separated bowl. Roll chicken pieces in honey mixture, then in bread crumbs; place in pan. Bake for 30 minutes, or until cooked thoroughly.

    This is a great recipe and even picky kid approved. I love balsamic vinegar but the kids wouldn’t touch it with a ten foot pole. But what they don’t know won’t hurt them. ;) My kids wolfed them down like they came from a fast food restaurant and are much healthier without all the additives.
