Buffalo Chicken Cheese Bites

The next appetizer was my most favorite & I know I will make them again very soon! These buffalo chicken bites I found on Made by Melissa were out of this world! Touchdown for sure! They were so creamy & cheesy and a great savory little bite! I served mine with ranch dressing, because that’s what I prefer with my buffalo chicken, but visit Melissa’s site for a homemade blue cheese dip. These will be a crowd pleaser for your next gathering for sure! Oh & I should also mention that I baked mine instead of frying them to save a few calories and make it a little easier on myself! They still came out crunchy on the outside & creamy on the inside. Sorry for the horrible photos, we were in a hurry to eat these before Alabama kicked off.


Buffalo Chicken Cheese Bites

Ingredients:
1 store-bought rotisserie chicken (or 2 large chicken breasts baked & shredded)
1/4 cup hot sauce (recommended: Frank’s Red Hot Buffalo Sauce)
3 1/2 oz. cream cheese, softened
1 3/4 cups sharp cheddar cheese, shredded
1/4 cup freshly sliced green onions, plus additional for garnish
1 cup all-purpose flour
3 eggs, lightly beaten
2 cups bread crumbs

Directions:
Preheat oven to 350 degrees. Cover a baking sheet with parchment paper & set aside.

Remove the breast meat from the rotisserie chicken & shred into pieces, discarding the skin. Place shredded chicken in a medium sized bowl. Add in hot sauce, cream cheese, cheddar cheese, & green onions. Mix thoroughly. Using a small cookie scoop, scoop out the chicken mixture & roll into balls & place on a large plate to await the dipping process.

Place flour, egg & bread crumbs in three separate bowls for dipping. Start with just 1/3 cup flour, 1/2 cup bread crumbs & 1 egg and then add more as needed. Take each buffalo chicken ball & roll it in the flour, then the egg and finally the bread crumbs, coating liberally. Place on prepared baking sheet.

Bake for 20-25 minutes until golden brown. Remove from oven & serve hot with desired dipping sauce.

    I made these for MNF this week and baked them as you suggested. I also used Cornflakes cereal which was PERFECT. Thanks for the recipe and YUM, I'll be making them a lot this football season!
