Apple Fritter Cake

It’s September and that means it’s apple season! It’s still warm temperatures around where I live, but I am ready for cooler temps, crisp weather, apple cider, pumpkin spice lattes, and chili! Can’t wait! While I do love all the seasons, fall is my favorite time of year. What’s your favorite season?

I bought some apples at the store and was just itching to bake something up with them and had this Apple Fritter Cake recipe burning a hole in my Pinterest pocket. This cake was absolutely phenomenal!! Adam said it tasted like a soft apple cinnamon roll. The cake was soft and had a nice hint of cinnamon and the topping had a nice texture to it. The sweetness from the icing took it over the top to amazing! Definitely make this again!!

Apple Fritter Cake

Makes 1 9 x 9 Cake

Ingredients:
For the Batter:
1 1/2 cups all purpose flour
1/8 tsp. salt
2 tsp. baking powder
1/8 tsp. ground cinnamon
pinch nutmeg
pinch all spice
1/2 cup sugar
3/4 cup milk
1 egg
1 tsp. vanilla
1/4 cup butter, melted
3 medium sized apples, peeled, cored & diced

For the Topping:
1/2 cup unsalted butter, softened
1/2 cup light brown sugar, packed
1 tbsp. all purpose flour
1/2 tbsp. ground cinnamon

For the Glaze:
1 cup confectioner’s sugar
2 1/2 tbsp. milk
1/2 tsp. vanilla

Directions:
Preheat oven to 350 degrees. Spray a 9 x 9 inch baking pan with cooking spray, set aside.

For the Batter:
In a medium sized bowl, add flour, salt, baking powder, cinnamon, nutmeg, all spice & whisk together. Add in sugar, milk, egg, & vanilla. Stir together with a spatula until incorporated. Stir in melted butter until fully incorporated. Pour batter into prepared pan and spread evenly. Top evenly with diced apples.

For the Topping:
In a small bowl, stir together the softened butter, brown sugar, 1 tbsp. flour, & cinnamon until incorporated. Drop by spoonfuls on top of the apple layer. Use the spatula and swirl the topping together so that it spreads somewhat over the apples.

Bake for approximately 40 minutes, until golden brown, the topping has set and the center is no longer jiggly. Remove from the oven and place on cooling rack. Let cool for 20 minutes.

For the Glaze:
In a small bowl stir together the confectioner’s sugar, milk, & vanilla until a glaze has formed. Once cake has cooled for 20 minutes, pour the glaze over top of the cake. Can serve warm or at room temperature. Store in an airtight container.

Notes:
Can easily double this and bake it in a 9 x 13 pan with the same amount of baking time.
