Sprinkle Sugar Cookies

Sprinkle Sugar Cookies {Macaroni and Cheesecake} Sophie loves cookies with sprinkles (or “prinkles” as she calls them). So when I had to make something for her Kindermuzik Christmas party I immediately thought this would be the perfect thing to bring! These Sprinkle Sugar Cookies are soft and chewy and so fun and festive! You could easily use Christmas colored sprinkles or use colored sugar instead of sprinkles. A cookie kids & adults are sure to love!

Ingredients:
2 1/4 cups all purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
Pinch salt
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 large egg
1/2 tbsp. vanilla
1/4 tsp. almond extract
Sprinkles for rolling (or granulated sugar)

Directions:
Preheat oven to 350 degrees. Cover baking sheets with parchment paper, set aside.

In a medium sized bowl, whisk together the flour, baking powder, baking soda, & salt.

In the bowl of  stand mixer, beat together the butter & sugar until creamy and fluffy. Add in egg, vanilla, & almond and beat until fully incorporated.

Gradually add in the flour mixture until just incorporated.

Place sprinkles or additional sugar in a shallow bowl.

Using a small cookie scoop, scoop the dough out and then roll the dough into 1 to 1 1/2 tbsp. sized balls. Roll each ball in the sprinkles (or sugar) and place on the prepared baking sheets 2 inches apart. Repeat with the remaining dough.

Using the back of a drinking glass, gently press down on the top of each ball of dough. You don’t want to flatten them, just press lightly.

Bake for exactly 10 minutes, until set. Remove from oven and transfer cookies to a cooling rack. Let cool for at least 15 minutes so they firm up a bit. Store in an airtight container.

Notes:
*If you don’t have almond extract you can just use additional vanilla.
*Can use granulated sugar or colored sugar instead of sprinkles.

    Don’t you love the special wordd our little ones have for something.
    When my daughter was small, she referred to spaghetti as sketti! You triggered some sweet memories. I know sophie will make the holidays special for everyone.
