Chicken Enchilada Roll-ups
We had a dinner meeting at our house on Friday night to prepare for a youth retreat we are leading in August, and I decided it would be fun to have a Mexican Fiesta theme to the dinner. So everyone brought some sort of mexican dish. I had seen these roll-ups on Delicious Meliscious
and Cook Like a Champion
and knew they would be a great addition to the party. Little did I know they would be such a huge hit! These went like hotcakes! They were so fresh and full of flavor and the perfect bite. This is my new go-to appetizer! They were super easy to make and everyone was asking how to make them. Definitely give these a try for your next gathering.
Chicken Enchilada Roll-Ups
2 8-oz. packages cream cheese, softened
1 1/3 cup shredded Mexican blend cheese
1 teaspoon garlic, finely minced
1 1/2 tablespoons chili powder
1 teaspoon cumin
cayenne pepper to taste
salt to taste
2 chicken breasts, baked & shredded
1/2 bunch cilantro, chopped
4 green onions, chopped
10-oz. can Rotel tomatoes
1 package jalapeno cheddar tortillas
Mix cheeses together until well blended.
Add all remaining ingredients and mix well. Cover and refrigerate for at least one hour.
Place one heaping spoonful onto tortilla.-Spread to edges using a metal spatula.
Roll and cut into slices.
