Enchilada Dip

So any Mexican Food combined into an appetizer equals awesomeness! Plus topped with melty cheese, how can you go wrong?! Seriously chips & dip are just my kryptonite. This Enchilada Dip is seriously amazing! Bursting with flavor and the perfect party dip! Or just add a side of rice and it makes a complete meal.

Enchilada Dip

Ingredients:
1 lb. lean ground beef
1/2 medium onion, chopped
2 cloves minced garlic
2 cups enchilada sauce
2 cups shredded Mexican blend cheese
Sour Cream for topping
Tortilla Chips

Directions:
Preheat oven to 350 degrees. Spray a 2 qt dish with cooking spray, set aside.

In a large skillet, add ground beef and brown. Drain off excess grease. Add in onion & garlic & cook for an additional 2-3 minutes. Add in enchilada sauce and stir to combine. Cook for a few minutes until it begins to bubble.

Pour into the 2 qt dish, and top with cheese. Bake for approximately 15 to 20 minutes until cheese has melted and mixture is bubbly. Top with sour cream and serve with tortilla chips.
