Chocolate Fudge Cookies

My friend asked me to bring dessert to dinner the other night. She was making homemade pizzas (which were fabulous!). I wanted something that kind of went with pizza, and I thought cookies would be perfect. I remembered seeing these healthier chocolate cookies on Two Peas and Their Pod and since I’ve been trying to watch what I eat lately, I thought that these would definitely do the trick. These were everything their name suggested, chocolately, fudgey and delicious. The four of us devoured an entire batch that night (about 18 cookies) while playing cards if that tells you how good these were!

Makes about 18 cookiesIngredients:
1 cup all-purpose flour
¼ teaspoon baking soda
1/8 teaspoon salt
5 tablespoons butter
7 tablespoons unsweetened cocoa
2/3 cup granulated sugar
1/3 cup packed brown sugar OR 2 tbsp. plus 2 tsp. brown sugar splenda
1/3 cup plain low-fat OR fat free yogurt
1 teaspoon vanilla extract

Directions:
Preheat oven to 350ºF. Spray baking sheets with cooking spray, line with parchment paper, or use a silicone baking mat.
Whisk together flour, soda, and salt, set aside.

Melt butter in a large saucepan over medium heat or melt in microwave in 30 second increments. Remove from heat.
Add cocoa powder and sugars (mixture will resemble coarse sand). Add yogurt and vanilla, stirring to combine. Add flour mixture, stirring until moist.

Drop by level tablespoons, or use a cookie scoop, 2 inches apart onto prepared baking sheets.
Bake for 8 to 10 minutes or until almost set. Lightly press cookies down gently with fingers as they puff a little when baking. Cool on pans 2 to 3 minutes or until firm.

Remove cookies from pans, cool on wire racks.

Hello! I made these cookies over the weekend and they were definitely delish! The only problem was that these did not form or “fall” into a cookie shape for whatever reason. I’m not a pro, but I have made cookies before and never had this problem. Do you know what it could be?
    Thanks!

I had to pat mine down a bit after baking, that might be it. Or I would try refrigerating the dough before baking. That should help.
