Eggnog Crumb Cake Muffins

Do you love eggnog? I actually do not, haha! However, I really liked these Eggnog Crumb Cake Muffins! They did not have a super strong eggnog flavor and reminded me of vanilla pound cake. The crumb topping gives such great texture and crunch. And I think these would be awesome with mini chocolate chips in them them (#addchocolatetoallthethings) This would be a great addition for Christmas brunch or make them for a snack to tie you over until Christmas dinner.

Eggnog Crumb Cake Muffins

Makes 12 Muffins

Ingredients:
For the Topping:
1/2 cup granulated sugar
1/2 cup all purpose flour
1/2 tsp. ground nutmeg
1/8 tsp. vanilla
2 1/2 tbsp. unsalted butter, melted

For the Batter:
1/4 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
2 1/2 cups all purpose flour
2 tsp. baking powder
1 tsp. ground nutmeg
1/2 tsp. salt
1 tsp. vanilla
1 1/4 cups eggnog or half & half

Directions:
Preheat oven to 425 degrees. Line a muffin tin with liners and spray liners with cooking spray for easy removal. Or you can do without liners and spray pan liberally if you prefer. Set aside.

For the Topping:
In a small bowl, add the sugar, flour, nutmeg, vanilla and butter. Stir to incorporated and mix until it forms into a crumbly texture. Set aside.

For the Batter:
In the bowl of a stand mixer, add butter and sugar and beat together until smooth. Add in eggs and beat until incorporated.

Add in the baking powder, nutmeg, salt & vanilla. Beat until just incorporated.

Gradually add the flour, alternating with the eggnog or half & half, beginning and ending with the flour ensuring everything is incorporated.

Using a large cookie or ice cream scoop, scoop the batter into the prepared pan, filling 3/4 full and distributing evenly. Sprinkle each on top with a heaping tablespoon of the topping.

Bake for approximately 20 minutes until lightly golden. Remove from oven and serve warm or at room temperature. Store in airtight container.

Notes:
*I used half & half since I’m not an eggnog fan but if you want that stronger flavor, use the eggnog and can even use eggnog extract instead of vanilla.
