Hot Cocoa Muffins


Ya’ll!!! You have got to make these muffins ASAP!!! These Hot Cocoa Muffins taste just like a cup of hot cocoa in muffin form! They are light and decadent and have such great flavor from the hot cocoa mix and marshmallow bits. These are going on my regular must make list and I think I may even make them for Christmas morning, they are that amazing!! My kids went crazy for these and kept asking for more.

Hot Cocoa Muffins

Makes a dozen muffins

Ingredients:
1/2 cup granulated sugar
1 1/2 cups all purpose flour
Heaping 1/2 cup Hot Cocoa Mix (two 1.25 oz. packets)
1 tbsp. baking powder
1/2 tsp. salt
1 cup semi-sweet chocolate chips, plus more for topping
3/4 cup marshmallow bits, plus more for topping*
2 eggs
1 tbsp. vanilla
3/4 cup milk
1/2 cup unsalted butter, melted and cooled

Directions:
Preheat oven to 375 degrees, spray muffin tins with cooking spray or use cupcake liners

In a large bowl, whisk together sugar, flour, hot cocoa mix, baking powder & salt. Add chocolate chips and marshmallow bits and stir to incorporate.

In a separate small bowl, add the eggs, vanilla, milk and the cooled melted butter. Stir to incorporate.

Add egg mixture to flour mixture and stir until fully incorporated.

Using a large cookie scoop or ice cream scoop, scoop batter into prepared muffin tins, filling 3/4 full. Top each muffin batter with additional marshmallow bits and chocolate chips.

Bake for 15-20 minutes until a toothpick inserted comes out clean.

Allow to cool completely, then run a knife around muffins and pop out. Serve warmed up or at room temperature.

Notes:
*Marshmallow bits are optional, they melt into the muffin and create a great creamy flavor and add great texture to the topping.
