Mexican food is probably one of my favorite food groups! I just love it…however I really love it when it’s fresh at home, not so much at the restaurants where it sticks to you and sits so heavy. Since Cinco de Mayo is VERY soon, I thought I’d share my favorite Mexican recipes. I’m sure I’ll be enjoying some of them the rest of this week. I might just make it an entire Mexican themed weekend! 🙂
