

2 Cups Basmati rice, cooked according to package directions
1 large white onion, cut into large dice
1/8 tsp. crushed red pepper
1 large can pineapple tidbits, drained
Soy Sauce (2-3 tbsp.)
Chopped cilantro to taste (1/4 cup or so)
Directions:
Heat a tbsp. olive oil in large skillet over medium heat. Add onion and crushed red pepper and cook until softened and opaque. Add cooked rice & pineapple, stir to heat through. Add the soy and cilantro to taste. Serve & enjoy!

1/2 cup crunchy peanut butter ( I used reduced fat)
2 tbsp. Soy
1 tsp. brown sugar
1/4-1/2 tsp. crushed red pepper
1 clove garlic, minced
1/2 cup water
2 tbsp. rice wine vinegar
2 tsp. sesame oil
Directions:
Combine all ingredients in blender and mix. It’s that easy!
