Mini Blue Cheese Twice Baked Potatoes

Ingredients:
12 new red potatoes, halved length wise
olive oil cooking spray or 1 tsp. EVOO
3/4 cup sour cream
1/2 cup reduced fat crumbled blue cheese
1/4 cup crumbled cooked bacon, plus more for garnish (I cheated and bought a jar of the Light Real bacon bits-still yummy!)
1/8 cup finely chopped red onion

Directions:
1. Pre-heat oven to 400 degrees. In a medium bowl, toss the potatoes with olive oil spray. Place cut side down on a baking sheet and bake until the skins are crisp, about 20-25 minutes.
2. Scoop out the center of each potato half and place in a medium bowl. Slightly mash the potatoes with a fork. Stir in sour cream, blue cheese, bacon, and onion. Fill each potato skin with sour cream mixture and top with more crumpled bacon.
