This is another great recipe from Elizabeth’s Edible Experience. I had these with the Tomatoes Stuffed with Roasted Corn Salad. We’ve been trying to eat healthy, and this was a great way to get the taste of fried, without all the calories. This sandwich was really delicious and a nice change from your typical burger! The cilantro lime mayo added a great fresh flavor instead of your usual ketchup or barbecue.
